Ingredients:

  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1 medium yellow onion (diced)
  • 2 garlic cloves (minced)
  • 1 red bell pepper (chopped)
  • 1 green bell pepper (chopped)
  • 1 cup uncooked long-grain white rice
  • 1 can (14.5 ounces) diced tomatoes (with juices)
  • 1 can (8 ounces) tomato sauce
  • 2 cups beef broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese
  • chopped fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet. Cook ground beef until browned and drain excess grease.
  2. Add onion, garlic, red pepper, and green pepper. Cook until vegetables are softened.
  3. Stir in rice, diced tomatoes, tomato sauce, broth, oregano, basil, salt, and pepper. Simmer until rice is tender.
  4. Transfer to a baking dish, top with cheddar cheese, and bake until cheese is melted.
  5. Let rest before serving. Garnish with parsley if desired.

Notes

  • You can substitute ground turkey or chicken for the beef.
  • For extra heat, add red pepper flakes or diced jalapeños.
  • Brown rice may be used, but increase the cooking time accordingly.
