    Crust:

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • Filling:

  • 1 1/2 cups chopped fresh rhubarb
  • 1 1/2 cups chopped fresh strawberries
  • 1/3 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. Make the crust: In a large bowl, cream together butter, sugars, and vanilla. Add flour and salt, mix until dough forms. Press two-thirds into the pan.
  3. Prepare the filling: Combine rhubarb, strawberries, sugar, cornstarch, and lemon juice. Spread over the crust.
  4. Top and bake: Crumble remaining dough over the top. Bake for 40–45 minutes until golden and bubbly. Cool before cutting into bars.

  • You can use frozen fruit—just thaw and drain before using.
  • Bars can be stored in the fridge for up to 5 days or frozen for longer storage.
