3/4cup granulated sugar
1/4cup brown sugar (packed)
1 large egg
1 teaspoon vanilla extract
2 1/2cups all-purpose flour
1/2 teaspoon baking powder

1/2cup strawberry jam or preserves
2–3 strawberry Pop-Tarts (chopped into small pieces)
Glaze:
1cup powdered sugar
1–2 tablespoons milk
1/2 teaspoon vanilla extract
optional: pink food coloring and sprinkles
Instructions
Preheat the oven: Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
Mix cookie dough: Cream together butter, sugars, egg, and vanilla. Combine dry ingredients separately, then mix into wet mixture. Fold in chopped Pop-Tarts.
Assemble cookies: Portion dough, create indentations, fill with jam, seal with more dough, and bake for 10–12 minutes.
Make glaze: Whisk together powdered sugar, milk, and vanilla. Add food coloring, if desired. Drizzle over cooled cookies and add sprinkles.
Notes
You can use any Pop-Tart flavor or jam for variety.
