For the base:

  • 1 1/2 cups graham cracker crumbs or vanilla wafer crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter (melted)

For the strawberry mousse:

  • 1 pound fresh strawberries (hulled)
  • 1/2 cup granulated sugar
  • 2 tablespoons lemon juice
  • 2 1/2 teaspoons unflavored gelatin
  • 2 tablespoons cold water
  • 1 1/2 cups heavy whipping cream (cold)

For topping (optional):

  • Fresh strawberries
  • whipped cream
  • strawberry glaze

Instructions

  1. Prepare the base: Line the bottom of a 9-inch springform pan with parchment paper. Combine graham cracker crumbs, sugar, and melted butter. Press into the pan to form the crust. Refrigerate.
  2. Make the strawberry mousse: Purée strawberries, sugar, and lemon juice. Cook in a saucepan. Bloom gelatin in water, add to the mixture. Cool. Whip cream until stiff peaks form. Fold strawberry mixture into cream. Pour over crust and refrigerate.
  3. Serve: Garnish with strawberries or whipped cream before serving.

Notes

  • For a firmer mousse, increase the gelatin slightly.
  • You can also layer with sliced strawberries between the mousse and crust for added texture.
