Cake:

  • 2 1/2 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tbsp lemon zest
  • 1/4 cup fresh lemon juice
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 2 cups fresh strawberries, hulled and sliced

Frosting:

  • 3 cups powdered sugar
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour three 8-inch round cake pans and line the bottoms with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, cream the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, followed by the lemon zest, lemon juice, and vanilla extract.
  4. Alternate adding the dry ingredients and buttermilk to the wet ingredients, mixing just until combined.
  5. Divide the batter evenly between the prepared pans and bake for 22 to 25 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool the cakes completely.
  7. For the frosting, beat the cream cheese and butter together until creamy. Gradually add powdered sugar, vanilla extract, and lemon juice, beating until smooth and fluffy.
  8. To assemble, layer the cakes with frosting and sliced strawberries between each layer. Frost the outside of the cake and garnish with extra strawberries if desired.

Notes

  • Chill the cake for 30 minutes before slicing to help it hold its shape.
  • You can also make the cake layers ahead and freeze them, then assemble later.
