Filling:
2cups fresh strawberries (hulled and chopped)
1 box strawberry gelatin (3 oz)
1 package cream cheese (8 oz, softened)
1cup powdered sugar
1 container whipped topping (8 oz, thawed)
1/2 teaspoon vanilla extract
Crust:
2cups Golden Oreos or vanilla sandwich cookies (crushed)
1/2cup unsalted butter (melted)
Instructions
Preheat the oven: Preheat the oven to 350°F (175°C).
Prepare the crust: Combine crushed Golden Oreos and melted butter. Press half into a 9×13-inch baking dish as the crust. Bake for 10 minutes and let cool.
Make the filling: Beat cream cheese and sugar until smooth. Fold in whipped topping and vanilla. Spread over the cooled crust.
Prepare the strawberry layer: Dissolve gelatin in hot water. Stir in chopped strawberries. Spoon over the cream layer.
Finish and chill: Sprinkle remaining cookie mixture on top. Chill for at least 4 hours before serving.
Notes
You can substitute Golden Oreos with graham crackers or shortbread cookies.
For extra flavor, add freeze-dried strawberries to the cookie topping.
