Cheesecake:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream

Topping:

  • 2 cups fresh strawberries, sliced
  • 1 cup crushed cornflakes or crispy rice cereal
  • 1/4 cup brown sugar
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat the oven: Preheat the oven to 325°F (163°C).
  2. Prepare the crust: Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into a 9-inch springform pan.
  3. Make the filling: Beat cream cheese and 1 cup sugar. Add eggs, one at a time, then vanilla and sour cream. Pour over crust.
  4. Bake: Bake for 50-60 minutes until almost set.
