2cups Golden Oreo crumbs (about 20 cookies)
1/4cup unsalted butter, melted
For the cheesecake filling:
24ounces cream cheese, softened
1cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
1/2cup sour cream
1/2cup strawberry preserves or jam
For the strawberry crunch topping:
1cup Golden Oreo crumbs
1/2cup freeze-dried strawberries, crushed
3 tablespoons unsalted butter, melted
Optional topping:
Whipped cream
Fresh strawberries for garnish
Instructions
Preheat the oven: Preheat to 325°F. Line a 9-inch springform pan with parchment and foil.
Prepare the crust: Mix Oreo crumbs and butter, press into pan, bake, and cool.
Make the filling: Beat cream cheese, add sugar, vanilla, eggs, and sour cream. Pour half into crust, swirl with preserves, repeat, and swirl again.
Bake: Place in a water bath, bake for 55–65 minutes until set. Cool and chill.
Prepare the topping: Mix Oreo crumbs, strawberries, and butter. Sprinkle over chilled cheesecake.
Serve: Top with whipped cream and fresh strawberries.
