For the crust:
1 and 1/2 cups graham cracker crumbs
1/4cup granulated sugar
6 tablespoons unsalted butter, melted
For the filling:
16oz cream cheese, softened
1/2cup granulated sugar
1 teaspoon vanilla extract
2 large eggs
1/4cup sour cream
For the strawberry topping:
1 and 1/2 cups fresh strawberries, chopped
2 tablespoons granulated sugar
1 teaspoon lemon juice
1 teaspoon cornstarch mixed with 1 tablespoon water
Instructions
Preheat the oven: Preheat the oven to 325°F (160°C). Line an 8×8-inch baking pan with parchment paper.
Prepare the crust: Combine graham cracker crumbs, sugar, and melted butter. Press into the pan and bake for 10 minutes.
Make the filling: Beat cream cheese until smooth. Add sugar, vanilla, eggs, and sour cream. Pour over crust and bake for 30–35 minutes.
Prepare the topping: Cook strawberries, sugar, and lemon juice until thickened. Spread over chilled cheesecake.
Serve: Slice into bars and enjoy!
Notes
Bars can be stored in the refrigerator for up to 5 days.
You can substitute raspberry or blueberry for the topping.
For a firmer crust, add an extra tablespoon of melted butter.
