  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup sour cream

For the strawberry topping:

  • 1 and 1/2 cups fresh strawberries, chopped
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon cornstarch mixed with 1 tablespoon water

Instructions

  1. Preheat the oven: Preheat the oven to 325°F (160°C). Line an 8×8-inch baking pan with parchment paper.
  2. Prepare the crust: Combine graham cracker crumbs, sugar, and melted butter. Press into the pan and bake for 10 minutes.
  3. Make the filling: Beat cream cheese until smooth. Add sugar, vanilla, eggs, and sour cream. Pour over crust and bake for 30–35 minutes.
  4. Prepare the topping: Cook strawberries, sugar, and lemon juice until thickened. Spread over chilled cheesecake.
