For the Pudding:
1 (3.4 oz) box instant vanilla pudding mix
1 1/2cups cold milk
For the Cheesecake Layer:
8oz cream cheese (softened)
1 (14 oz) can sweetened condensed milk
1 teaspoon vanilla extract
Additional Ingredients:
2cups whipped topping or whipped cream
3 ripe bananas (sliced)
1 1/2cups fresh strawberries (sliced)
1 box vanilla wafer cookies
Instructions
Prepare the Pudding: In a large bowl, whisk together the pudding mix and cold milk until thickened, about 2 minutes.
Make the Cheesecake Layer: In a separate bowl, beat the cream cheese until smooth. Add the sweetened condensed milk and vanilla extract, and beat until creamy and well combined. Fold in the prepared pudding and then gently fold in the whipped topping.
Assemble the Dessert: Layer vanilla wafers on the bottom of a 9×13-inch dish or trifle bowl. Spread one-third of the pudding mixture over the cookies. Top with a layer of sliced bananas and strawberries. Repeat the layers two more times, ending with a smooth layer of the pudding mixture on top. Garnish with additional fruit and crushed wafers, if desired.
Chill and Serve: Cover and refrigerate for at least 4 hours or overnight for best texture.
Notes
To prevent bananas from browning, toss slices in a little lemon juice before layering.
For extra strawberry flavor, add a thin layer of strawberry jam between the pudding layers.
