These Strawberry Bars are a delightful fruity dessert perfect for any occasion. A buttery crust topped with a sweet strawberry filling and oat crumble, these bars are a crowd-pleaser!

Crust:

  • 1 cup unsalted butter (softened)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar (packed)
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon salt

Filling:

  • 1 1/2 cups strawberry jam or preserves
  • 1 cup fresh strawberries (chopped)
  • 1 tablespoon cornstarch
  • juice of 1/2 lemon

Oat Topping:

  • 1/2 cup old-fashioned oats

Instructions

  1. Preheat oven and prepare baking dish: Preheat oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper.
  2. Prepare crust: Cream together butter, sugars, and vanilla. Mix in flour and salt to form a dough. Press into the baking dish.
  3. Make filling: Combine jam, strawberries, cornstarch, and lemon juice. Spread over the crust.
  4. Add oat topping: Mix reserved dough with oats and crumble over the strawberry layer.
  5. Bake: Bake for 35–40 minutes until golden and bubbly. Cool before slicing into bars.

Notes

  • You can use raspberry or mixed berry preserves instead of strawberry.
  • Bars can be made a day ahead and stored in the fridge.
  • For a firmer bar, chill before slicing.
