  • 2 1/4 teaspoons active dry yeast
  • 1/2 cup warm milk
  • 1/4 cup granulated sugar
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/4 cup unsalted butter, softened

For the Cream Cheese Filling:

  • 4 oz cream cheese, softened
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chopped fresh strawberries

For the Pineapple Crust Topping:

  • 1/4 cup unsalted butter, softened
  • 1/3 cup powdered sugar
  • 1 egg yolk
  • 1/2 cup cake flour
  • 1/4 teaspoon baking powder

For Assembly:

  • 1 egg, beaten (for egg wash)
  • extra strawberries for garnish (optional)

Instructions

  1. Bun Dough: In a small bowl, combine yeast, warm milk, and 1 tablespoon of sugar. Let sit for 5–10 minutes until foamy. In a large bowl, mix flour, remaining sugar, and salt. Add the yeast mixture, egg, and butter, and knead for 8–10 minutes until smooth and elastic. Cover and let rise for 1 hour or until doubled.
  2. Cream Cheese Filling: Meanwhile, make the filling by mixing cream cheese, powdered sugar, and vanilla until smooth. Fold in chopped strawberries and chill until ready to use.
  3. Pineapple Crust Topping: For the crust, beat butter and powdered sugar until creamy. Mix in egg yolk, then add cake flour and baking powder. Form into a dough, wrap in plastic, and chill.
  4. Assembly: Once the dough has risen, divide into 8 equal pieces. Flatten each piece, add a spoonful of strawberry cream cheese filling, and pinch to seal. Shape into smooth balls and place on a parchment-lined baking sheet. Roll the chilled crust dough into 8 equal rounds and place one on top of each bun. Brush buns with egg wash and let rise for another 30 minutes.
  5. Baking: Preheat oven to 350°F (175°C). Bake for 18–20 minutes until golden. Cool slightly before serving. Garnish with extra fresh strawberries if desired.
