For the Bun Dough:
2 1/4 teaspoons active dry yeast
1/2cup warm milk
1/4cup granulated sugar
2 1/2cups all-purpose flour
1/2 teaspoon salt
1 large egg
1/4cup unsalted butter, softened
For the Cream Cheese Filling:
4oz cream cheese, softened
2 tablespoons powdered sugar
1/2 teaspoon vanilla extract
1/2cup chopped fresh strawberries
For the Pineapple Crust Topping:
1/4cup unsalted butter, softened
1/3cup powdered sugar
1 egg yolk
1/2cup cake flour
1/4 teaspoon baking powder
For Assembly:
1 egg, beaten (for egg wash)
extra strawberries for garnish (optional)
Instructions
Bun Dough: In a small bowl, combine yeast, warm milk, and 1 tablespoon of sugar. Let sit for 5–10 minutes until foamy. In a large bowl, mix flour, remaining sugar, and salt. Add the yeast mixture, egg, and butter, and knead for 8–10 minutes until smooth and elastic. Cover and let rise for 1 hour or until doubled.
Cream Cheese Filling: Meanwhile, make the filling by mixing cream cheese, powdered sugar, and vanilla until smooth. Fold in chopped strawberries and chill until ready to use.
Pineapple Crust Topping: For the crust, beat butter and powdered sugar until creamy. Mix in egg yolk, then add cake flour and baking powder. Form into a dough, wrap in plastic, and chill.
Assembly: Once the dough has risen, divide into 8 equal pieces. Flatten each piece, add a spoonful of strawberry cream cheese filling, and pinch to seal. Shape into smooth balls and place on a parchment-lined baking sheet. Roll the chilled crust dough into 8 equal rounds and place one on top of each bun. Brush buns with egg wash and let rise for another 30 minutes.
Baking: Preheat oven to 350°F (175°C). Bake for 18–20 minutes until golden. Cool slightly before serving. Garnish with extra fresh strawberries if desired.
Notes
For easier assembly, chill the cream cheese filling before using.
Use a sharp knife to score a crisscross pattern on the pineapple crust before baking for a traditional look.
