Steakhouse Creamed Spinach

A rich and creamy side dish made with spinach, garlic, and cheese, perfect for pairing with steak or roasted meats.

  • 2 tablespoons unsalted butter
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1/4 teaspoon ground nutmeg
  • Salt and black pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup cream cheese, softened
  • 1 pound fresh spinach, chopped (or 16 oz frozen spinach, thawed and drained)

Instructions

  1. In a large skillet over medium heat, melt the butter.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the garlic and cook for another 1-2 minutes until fragrant.
  4. Sprinkle in the flour and cook, stirring constantly, for 1-2 minutes to form a roux.
  5. Gradually whisk in the milk and heavy cream, stirring to avoid lumps.
  6. Add nutmeg, salt, and pepper, and bring the mixture to a gentle simmer until thickened.
  7. Stir in the Parmesan and cream cheese until smooth and melted.
  8. Add the chopped spinach and cook until heated through and fully coated in the sauce.
  9. Adjust seasoning if needed and serve hot.

Notes

  • You can use frozen spinach to save time; just ensure it’s well-drained.
  • Add a pinch of red pepper flakes for a hint of spice.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
