- 1 lb sirloin steak, cut into bite-sized cubes
- 1.5 lbs baby potatoes, halved or quartered
- 2 tbsp olive oil, divided
- 1 tbsp butter
- 3 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp onion powder
- 1/2 tsp dried thyme
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 425°F (220°C).
- Toss the potatoes with 1 tbsp olive oil, paprika, onion powder, thyme, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes until golden and tender.
- While the potatoes are roasting, heat the remaining 1 tbsp olive oil in a large skillet over medium-high heat.
- Add steak bites in a single layer (in batches if needed) and sear for 2-3 minutes per side until browned and cooked to your desired doneness. Remove and set aside.
- In the same skillet, reduce heat to medium, add butter and garlic, and sauté for 1 minute.
- Return steak bites to the skillet and toss to coat in the garlic butter for 1-2 minutes.
- Serve steak bites alongside roasted potatoes, garnished with chopped parsley.
Notes
- Use any tender cut of beef like ribeye or tenderloin if preferred.
- Make sure steak bites are dry before searing for the best browning.
- Can be served with a side of vegetables or a salad for a complete meal.
