1lb sirloin steak, cut into bite-sized cubes
1.5lbs baby potatoes, halved or quartered
2 tbsp olive oil, divided
1 tbsp butter
3 cloves garlic, minced
1 tsp paprika
1/2 tsp onion powder
1/2 tsp dried thyme
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Preheat oven to 425°F (220°C).
Toss the potatoes with 1 tbsp olive oil, paprika, onion powder, thyme, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes until golden and tender.
While the potatoes are roasting, heat the remaining 1 tbsp olive oil in a large skillet over medium-high heat.
Add steak bites in a single layer (in batches if needed) and sear for 2-3 minutes per side until browned and cooked to your desired doneness. Remove and set aside.
In the same skillet, reduce heat to medium, add butter and garlic, and sauté for 1 minute.
Return steak bites to the skillet and toss to coat in the garlic butter for 1-2 minutes.
Serve steak bites alongside roasted potatoes, garnished with chopped parsley.
Notes
Use any tender cut of beef like ribeye or tenderloin if preferred.
Make sure steak bites are dry before searing for the best browning.
Can be served with a side of vegetables or a salad for a complete meal.
