1lb flank steak or skirt steak
2 tbsp olive oil
2 cloves garlic, minced
1 tsp smoked paprika
1/2 tsp chili powder
1/2 tsp salt
1/4 tsp black pepper
juice of 1 lime
For the Bowl:
2cups cooked brown rice or quinoa
1cup grilled or roasted corn kernels
1cup cherry tomatoes, halved
1 avocado, sliced
1/4cup crumbled feta or cotija cheese
2 tbsp chopped fresh cilantro
lime wedges for serving
Instructions
Marinate the Steak: In a shallow dish, whisk together olive oil, garlic, smoked paprika, chili powder, salt, pepper, and lime juice. Add steak and coat well. Marinate for at least 30 minutes.
Grill the Steak: Preheat grill to medium-high heat. Grill steak for 4–5 minutes per side. Let rest for 5 minutes before slicing thinly.
Assemble the Bowls: Divide rice among bowls. Top with corn, tomatoes, avocado, steak, cheese, and cilantro. Serve with lime wedges.
Notes
For a spicier version, add sliced jalapeños or drizzle with chipotle sauce.
