For the Chicken:
4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
For the Filling:
1cup fresh spinach (chopped)
1/2cup cream cheese (softened)
1/2cup shredded mozzarella cheese
1/4cup grated Parmesan cheese
2 cloves garlic (minced)
Instructions
Preheat oven to 375°F (190°C). Mix spinach, cream cheese, mozzarella, Parmesan, and garlic. Slice pocket into chicken. Season chicken. Stuff with mixture.
Heat olive oil in skillet. Sear chicken. Bake in oven until cooked through.
Rest before serving.
Notes
You can use thawed frozen spinach if fresh isn’t available.
