For the crust:

  • 1 unbaked 9-inch pie crust (store-bought or homemade)

For the filling:

  • 1 tablespoon olive oil
  • 1/2 small onion, finely chopped
  • 2 cloves garlic, minced
  • 5 ounces fresh spinach (or 1 cup thawed and drained frozen spinach)
  • 4 large eggs
  • 1 cup whole milk or half-and-half
  • 1/2 cup crumbled feta cheese
  • 1/4 cup shredded mozzarella or Swiss cheese (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon ground nutmeg (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C). If using a store-bought crust, place it in a 9-inch pie dish and prick the bottom with a fork. Pre-bake the crust for 8–10 minutes, then set aside.
  2. Sauté onions and spinach: Heat olive oil in a skillet over medium heat. Sauté the onion until soft, about 3–4 minutes. Add garlic and cook for another 30 seconds. Stir in fresh spinach and cook until wilted (or heat through if using frozen spinach). Remove from heat and let cool slightly.
  3. Prepare the filling: In a large bowl, whisk together the eggs, milk, salt, pepper, and nutmeg. Stir in the spinach mixture and feta cheese. Add shredded cheese if using. Pour the mixture into the pre-baked crust and spread evenly.
  4. Bake: Bake for 35–40 minutes, or until the center is set and the top is lightly golden. Let cool for 10 minutes before slicing and serving.
