Spinach Mixture:

  • 2 cups fresh spinach (chopped and tightly packed)
  • 4 ounces cream cheese (softened)
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Cheese Blend:

  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. Preheat Oven: Preheat oven to 400°F. Line a baking sheet with parchment paper or a silicone baking mat.
  2. Prepare Spinach Mixture: In a medium bowl, combine spinach, cream cheese, sour cream, mayonnaise, garlic powder, onion powder, salt, pepper, and Parmesan cheese. Mix until thoroughly combined.
  3. Add Cheese: Stir in shredded mozzarella and cheddar cheeses until evenly distributed.
  4. Bake: Drop rounded tablespoons of the spinach-cheese mixture onto the prepared baking sheet, spacing about 2 inches apart. Flatten each slightly into thin rounds. Bake 10-12 minutes or until golden brown and edges are crisp.
  5. Cool and Serve: Allow to cool on baking sheet for 5 minutes before transferring to a wire rack. Serve warm or at room temperature.
