Puff Pastry:
1 sheet frozen puff pastry, thawed
Spinach Filling:
1 tablespoon olive oil
2 cloves garlic, minced
5oz fresh spinach (or 1 cup frozen spinach, thawed and drained)
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2cup crumbled feta cheese
Additional:
1 egg, beaten (for egg wash)
Optional sesame seeds for garnish
Instructions
Preheat the Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Prepare Puff Pastry: On a floured surface, roll out the puff pastry and cut it into squares. Fill each square with the spinach-feta mixture, fold into a triangle, and seal the edges.
Bake: Transfer pastries to the baking sheet, brush with egg wash, sprinkle with sesame seeds, and bake for 18–22 minutes until golden.

Notes
