Puff Pastry:

  • 1 sheet frozen puff pastry, thawed

Spinach Filling:

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 5 oz fresh spinach (or 1 cup frozen spinach, thawed and drained)
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crumbled feta cheese

Additional:

  • 1 egg, beaten (for egg wash)
  • Optional sesame seeds for garnish

Instructions

  1. Preheat the Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Sauté Garlic and Spinach: In a skillet over medium heat, heat olive oil and sauté garlic. Add spinach, cook until wilted, then season with oregano, salt, and pepper. Let cool slightly and stir in the feta.
  3. Prepare Puff Pastry: On a floured surface, roll out the puff pastry and cut it into squares. Fill each square with the spinach-feta mixture, fold into a triangle, and seal the edges.
  4. Bake: Transfer pastries to the baking sheet, brush with egg wash, sprinkle with sesame seeds, and bake for 18–22 minutes until golden.
  5. Serve: Enjoy warm or at room temperature.
