Filling:

  • 1 sheet frozen puff pastry, thawed
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 4 oz fresh spinach (or 3/4 cup frozen spinach, thawed and squeezed dry)
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crumbled feta cheese

Additional:

  • 1 egg, beaten (for egg wash)
  • Optional sesame seeds or everything bagel seasoning for topping

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Sauté spinach: In a skillet over medium heat, heat olive oil and sauté the garlic. Add spinach and cook until wilted. Season with oregano, salt, and pepper. Remove from heat and let cool slightly, then stir in the feta.
  3. Prepare pastry: Roll out the puff pastry sheet into a 10×12-inch rectangle. Spread the spinach-feta mixture over one half. Place the second piece of pastry on top, press gently to seal, and cut into strips.
  4. Twist and bake: Twist each strip gently and place on the baking sheet. Brush with beaten egg, sprinkle with sesame seeds or seasoning if desired. Bake for 18–20 minutes until golden and puffed. Serve warm or at room temperature.
