  • Salt and pepper to taste
  • For the Cauliflower Rice:

  • 4 cups cauliflower rice
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon onion powder
  • 1 tablespoon lime juice
  • 1/4 cup chopped fresh cilantro
  • For Topping:

  • Sliced avocado
  • Lime wedges
  • Sliced jalapeños (optional)

Instructions

  1. Marinate the Shrimp: In a bowl, toss shrimp with 1 tablespoon olive oil, garlic, smoked paprika, cayenne, chili flakes, salt, and pepper. Let marinate for 10 minutes.
  2. Cook the Shrimp: Heat the remaining tablespoon of olive oil in a skillet over medium-high heat. Add the shrimp in a single layer and cook for 2–3 minutes per side until opaque and lightly charred. Remove and set aside.
  3. Prepare the Cauliflower Rice: In the same skillet, add cauliflower rice, cumin, onion powder, salt, and lime juice. Cook for 5–6 minutes, stirring occasionally, until tender. Stir in chopped cilantro.
  4. Assemble: Divide the cauliflower rice between serving bowls and top with spicy shrimp. Add sliced avocado, lime wedges, and jalapeños if desired. Serve immediately.
