Main Ingredients:
2cups corn kernels (fresh, frozen, or well-drained canned)
1/4cup mayonnaise
1/4cup sour cream
1 tablespoon lime juice (fresh-squeezed)
Spice Mix:
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/2 teaspoon ground cumin
optional 1/4 teaspoon cayenne pepper
Instructions
Mix Ingredients: In a large bowl, combine corn, mayonnaise, sour cream, and lime juice until well coated.
Add Spices: Stir in chili powder, smoked paprika, cumin, and cayenne pepper (if desired) until evenly mixed.
Form Patties: Shape the mixture into small patties, around 1 tablespoon each.
Fry: Heat oil in a skillet, then fry patties in batches for 2-3 minutes per side until crispy and golden.
Drain and Serve: Place fried patties on paper towels to drain excess oil. Serve hot with lime juice or salsa.
Notes
Fresh corn is recommended, but frozen or canned corn can be used if well-drained.
Adjust spice levels to suit your preference; cayenne pepper can be omitted for less heat.
If patties are delicate, enjoy them as ‘corn fritters’ for a delicious alternative.
