For the Corn Bites:
2cups frozen corn, thawed and patted dry
1/2cup crumbled cotija cheese
1/2cup shredded pepper jack cheese
1/4cup mayonnaise
1/4cup chopped fresh cilantro
2 tablespoons lime juice
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
1/4 teaspoon black pepper
1 egg
1/3cup all-purpose flour
1/2cup panko breadcrumbs
Vegetable oil for frying
Instructions
In a large bowl, combine the corn, cotija cheese, pepper jack cheese, mayonnaise, cilantro, lime juice, chili powder, smoked paprika, garlic powder, cayenne, salt, and black pepper. Mix well.
Add the egg and flour and stir until fully incorporated. Shape mixture into small balls or patties. Roll in panko breadcrumbs.
In a skillet, heat vegetable oil over medium heat. Fry corn bites in batches for 2–3 minutes per side until golden and crispy.
Transfer to a paper towel–lined plate to drain. Serve warm with lime wedges or dipping sauce.
Notes
These bites can be made ahead and reheated in the oven at 375°F for 8–10 minutes.
For a dipping sauce, mix sour cream, lime juice, and a pinch of chili powder.
