Description

These Spicy Dilly Beans are a tangy and flavorful pickled green bean recipe featuring fresh garlic, dill, and a kick of red pepper flakes. Perfect as a crunchy snack or a zesty side dish, they bring a vibrant homemade touch to your pantry with minimal fuss.

Ingredients

Scale

Pickling Brine

  • 1 cup white vinegar
  • 1 cup water
  • 1 tablespoon salt (non-iodized, like kosher or sea salt)

Vegetables and Seasoning

  • 1 pound fresh green beans, trimmed
  • 4 garlic cloves, peeled and smashed
  • 2 tablespoons fresh dill weed (or 1 tablespoon dried dill weed)
  • 1 teaspoon red pepper flakes (adjust to taste)

Instructions

  1. Prepare Ingredients: Gather all ingredients and necessary tools, including sterilized jars for pickling.
  2. Clean and Trim Beans: Wash the green beans thoroughly and trim the ends off carefully for an even texture and appearance.
  3. Make Brine: In a medium saucepan, combine white vinegar, water, and salt. Heat the mixture until the salt dissolves completely, ensuring the brine is ready for pickling.
  4. Pack Jars: Pack the trimmed green beans vertically into sterilized jars, leaving about half an inch of headspace at the top to allow for expansion during pickling.
  5. Add Flavors: To each jar, add one smashed garlic clove, one tablespoon of dill weed, and a sprinkle of red pepper flakes to infuse the beans with classic dill pickle spice and heat.
  6. Pour Brine: Pour the hot brine over the beans in the jars, making sure the beans are completely submerged while still leaving half an inch of space at the top.
  7. Seal Jars: Wipe the rims of the jars clean, place lids on top, and screw the metal bands until they are fingertip-tight, preparing them for processing.
  8. Process Jars: If you plan to store the pickles long-term, process the jars by placing them in a boiling water bath for preservation and safety.
  9. Cool and Check Seals: Allow the jars to cool completely on a towel or rack, then check that each jar has sealed properly to prevent spoilage.
  10. Store and Marinate: Store the sealed jars in a cool, dark place. Allow the beans to marinate for at least one week before enjoying to develop full flavor.

Notes

  • Use non-iodized salt such as kosher or sea salt to avoid cloudiness in the brine.
  • Adjust red pepper flakes quantity to control the spiciness level.
  • If not processing in a water bath, keep refrigerated and consume within a few weeks.
  • Ensure jars and lids are properly sterilized to prevent contamination.
  • For crunchier beans, blanch them briefly before packing if preferred.
