Chicken:
1pound boneless, skinless chicken thighs (cut into bite-sized pieces)
2 tablespoons soy sauce
1 tablespoon sriracha
1 tablespoon honey
1 tablespoon sesame oil
2 cloves garlic (minced)

1 tablespoon olive oil
Rice Bowls:
2cups cooked jasmine or white rice
1cup shredded carrots
1cup cucumber (thinly sliced)
1 avocado (sliced)
1/4cup green onions (chopped)
1 tablespoon sesame seeds
Yum Yum Sauce:
1/2cup mayonnaise
1 tablespoon ketchup
1 tablespoon rice vinegar
1 teaspoon garlic powder
1 teaspoon sugar
1–2 teaspoons sriracha (to taste)
1–2 tablespoons water (to thin)
Instructions
Marinate the Chicken: In a bowl, mix soy sauce, sriracha, honey, sesame oil, garlic, and ginger. Add chicken and toss to coat. Marinate for at least 15 minutes.
Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 6–8 minutes until fully cooked and slightly caramelized.
Prepare Yum Yum Sauce: Whisk together all yum yum sauce ingredients in a small bowl, adding water to reach desired consistency.
Assemble Rice Bowls: Start with a scoop of rice, then layer with spicy chicken, shredded carrots, cucumber, avocado, and green onions. Drizzle with yum yum sauce and sprinkle with sesame seeds.

Notes
Substitute chicken thighs with chicken breast or tofu if preferred.
