  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 2 cloves garlic (minced)
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon olive oil

Rice Bowls:

  • 2 cups cooked jasmine or white rice
  • 1 cup shredded carrots
  • 1 cup cucumber (thinly sliced)
  • 1 avocado (sliced)
  • 1/4 cup green onions (chopped)
  • 1 tablespoon sesame seeds

Yum Yum Sauce:

  • 1/2 cup mayonnaise
  • 1 tablespoon ketchup
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon sugar
  • 12 teaspoons sriracha (to taste)
  • 12 tablespoons water (to thin)

Instructions

  1. Marinate the Chicken: In a bowl, mix soy sauce, sriracha, honey, sesame oil, garlic, and ginger. Add chicken and toss to coat. Marinate for at least 15 minutes.
  2. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 6–8 minutes until fully cooked and slightly caramelized.
  3. Prepare Yum Yum Sauce: Whisk together all yum yum sauce ingredients in a small bowl, adding water to reach desired consistency.
  4. Assemble Rice Bowls: Start with a scoop of rice, then layer with spicy chicken, shredded carrots, cucumber, avocado, and green onions. Drizzle with yum yum sauce and sprinkle with sesame seeds.
  5. Serve: Serve immediately and enjoy!

Notes
