Spanish Rice Recipe

A flavorful and easy Spanish Rice recipe made with rice, tomatoes, onions, garlic, and spices. Perfect as a side dish for any Mexican-inspired meal.

Ingredients

  • 1 cup long grain white rice
  • 2 tablespoons vegetable oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 1/2 cups chicken broth
  • 1 cup canned diced tomatoes (with juice)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt, to taste
  • Fresh cilantro, chopped (optional, for garnish)

Instructions

  1. Heat the vegetable oil in a skillet over medium heat.
  2. Add the rice and cook, stirring frequently, until golden brown.
  3. Add the chopped onion and garlic, and sauté until softened.
  4. Stir in the diced tomatoes with juice, chicken broth, cumin, chili powder, and salt.
  5. Bring the mixture to a boil, then reduce heat to low and cover.
  6. Simmer for about 20 minutes, or until the rice is tender and the liquid is absorbed.
  7. Remove from heat and let sit, covered, for 5 minutes.
  8. Fluff with a fork and garnish with chopped cilantro if desired. Serve warm.

Notes

  • Use vegetable broth to make it vegetarian.
  • Adjust spices to taste for more or less heat.
  • Can be made ahead and reheated for serving.
