Southern-Style Biscuits & Sausage Gravy Recipe

Classic Southern-style biscuits served with creamy sausage gravy — a hearty and comforting breakfast favorite.

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 6 tablespoons unsalted butter, cold and cubed
  • 3/4 cup buttermilk
  • 1 pound breakfast sausage
  • 1/4 cup all-purpose flour (for gravy)
  • 2 1/2 cups whole milk
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 450°F (230°C).
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cut in the cold butter using a pastry cutter or your hands until mixture resembles coarse crumbs.
  4. Stir in the buttermilk until just combined. Do not overmix.
  5. Turn dough onto a floured surface, pat to 1-inch thickness, and cut out biscuits using a round cutter.
  6. Place biscuits on a baking sheet and bake for 12-15 minutes, or until golden brown.
  7. While biscuits are baking, cook sausage in a large skillet over medium heat until browned and cooked through.
  8. Sprinkle flour over the sausage and stir to coat. Cook for 1-2 minutes to eliminate raw flour taste.
  9. Gradually pour in the milk, stirring constantly until the gravy thickens, about 5-7 minutes.
  10. Season with salt and pepper to taste.
  11. Serve warm sausage gravy over freshly baked biscuits.

Notes

  • Use very cold butter for flakier biscuits.
  • You can add a pinch of cayenne pepper to the gravy for a little heat.
  • Gravy can be made ahead and reheated with a splash of milk.
