- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 6 tablespoons unsalted butter, cold and cubed
- 3/4 cup buttermilk
- 1 pound breakfast sausage
- 1/4 cup all-purpose flour (for gravy)
- 2 1/2 cups whole milk
- Salt and black pepper to taste
Instructions
- Preheat the oven to 450°F (230°C).
- In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- Cut in the cold butter using a pastry cutter or your hands until mixture resembles coarse crumbs.
- Stir in the buttermilk until just combined. Do not overmix.
- Turn dough onto a floured surface, pat to 1-inch thickness, and cut out biscuits using a round cutter.
- Place biscuits on a baking sheet and bake for 12-15 minutes, or until golden brown.
- While biscuits are baking, cook sausage in a large skillet over medium heat until browned and cooked through.
- Sprinkle flour over the sausage and stir to coat. Cook for 1-2 minutes to eliminate raw flour taste.
- Gradually pour in the milk, stirring constantly until the gravy thickens, about 5-7 minutes.
- Season with salt and pepper to taste.
- Serve warm sausage gravy over freshly baked biscuits.
Notes
- Use very cold butter for flakier biscuits.
- You can add a pinch of cayenne pepper to the gravy for a little heat.
- Gravy can be made ahead and reheated with a splash of milk.
