Ingredients

Units Scale
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 6 tablespoons unsalted butter, cold and cubed
  • 3/4 cup buttermilk
  • 1 tablespoon melted butter (for brushing)
  • 1 pound breakfast sausage
  • 1/4 cup all-purpose flour (for gravy)
  • 2 1/2 cups whole milk
  • 1/2 teaspoon black pepper
  • Salt to taste

Instructions

  1. Preheat the oven to 450°F (230°C).
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the buttermilk until just combined. Do not overmix.
  5. Turn dough onto a floured surface and gently pat to 1-inch thickness. Fold the dough over itself a few times for flaky layers.
  6. Cut out biscuits using a round cutter and place on a baking sheet.
  7. Bake for 12-15 minutes or until golden brown. Brush with melted butter after baking.
  8. Meanwhile, cook the sausage in a skillet over medium heat until browned and crumbled.
  9. Sprinkle flour over the cooked sausage and stir to coat evenly.
  10. Gradually add milk, stirring constantly until thickened, about 5-7 minutes.
  11. Season with black pepper and salt to taste.
  12. Serve hot sausage gravy over freshly baked biscuits.

Notes

  • Use cold butter for flakier biscuits.
  • Don’t overwork the dough to keep biscuits tender.
  • Adjust milk in gravy to your preferred thickness.
