  • 1 cup long-grain white rice, uncooked
  • 1 can (15 ounces) tomato sauce
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 1 cup frozen corn kernels
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1 1/2 cups beef broth
  • 1 tablespoon olive oil

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F and lightly grease a 9×13-inch baking dish.
  2. Cook Beef and Vegetables: In a skillet, brown the ground beef in olive oil. Add onion, green pepper, tomato sauce, diced tomatoes, corn, and seasonings. Simmer for 5 minutes.
  3. Layer Casserole: Spread uncooked rice at the bottom of the baking dish. Layer beef mixture and cheese. Repeat layers and top with remaining cheese.
