Wet Ingredients:

  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/4 cup unsulfured molasses
  • 1 large egg

For Rolling:

  • 1/4 cup granulated sugar

Instructions

  1. Preheat the Oven: Preheat oven to 350°F and line baking sheets with parchment paper.
  2. Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and brown sugar until light and fluffy.
  3. Add Molasses and Egg: Beat in the molasses and egg until fully combined.
  4. Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, and cloves.
  5. Combine Wet and Dry: Gradually add the dry ingredients to the wet mixture and mix until a soft dough forms.
  6. Shape and Bake: Scoop tablespoon-sized portions of dough, roll into balls, coat in granulated sugar, and place on baking sheets. Bake for 9–11 minutes.
  7. Cool: Let cookies cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For even softer cookies, slightly underbake and let them finish setting on the baking sheet.
  • These cookies freeze well—just thaw at room temperature before serving.
