  • 3/4 cup unsalted butter (softened)
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1/2 cup rainbow sprinkles (jimmies, not nonpareils)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Mix dry ingredients: In a medium bowl, whisk together the flour, baking soda, cream of tartar, and salt.
  3. Cream butter and sugars: In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and creamy.
  4. Add wet ingredients: Mix in the egg, egg yolk, vanilla extract, and almond extract (if using) until well combined.
  5. Combine and fold: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Gently fold in the rainbow sprinkles.
  6. Scoop and bake: Scoop the dough into 1.5-tablespoon portions onto the prepared baking sheets. Bake for 9–11 minutes until edges are set but centers are slightly underbaked.
  7. Cool and enjoy: Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
