Ingredients

Units Scale

Dry Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt

Wet Ingredients:

  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg (or egg substitute for eggless version)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional for bakery-style flavor)
  • 1/2 cup rainbow sprinkles

Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix dry ingredients: In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
  3. Cream butter and sugars: In a large mixing bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add wet ingredients: Beat in the egg and vanilla (and almond extract if using) until smooth.
  5. Combine and fold: Gradually mix in the dry ingredients until just combined. Gently fold in the rainbow sprinkles.
  6. Bake: Scoop tablespoon-sized portions of dough onto the prepared baking sheet. Bake for 8–10 minutes until edges are set but centers are soft.
  7. Cool and enjoy: Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Chill the dough for 30 minutes for thicker cookies.
  • Use jimmies-style sprinkles (not nonpareils) to avoid color bleeding.
  • Substitute plant-based butter and a flax egg for a vegan version.
