  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • 1/3 cup milk
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 1/2 cups peeled and diced apples (Granny Smith or Honeycrisp)
  • Vegetable oil, for frying

For the Vanilla Glaze:

  • 1 cup powdered sugar
  • 23 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
  2. In another bowl, beat the eggs, then add milk, melted butter, and vanilla extract.
  3. Pour wet ingredients into dry ingredients and stir until just combined.
  4. Fold in diced apples.
  5. Heat about 2 inches of vegetable oil in a deep skillet or pot over medium heat until it reaches 350°F (175°C).
  6. Using a spoon or cookie scoop, drop small mounds of batter into the hot oil, cooking a few at a time.
  7. Fry for 2–3 minutes per side or until golden brown and cooked through.
  8. Remove with a slotted spoon and place on a paper towel-lined plate to drain.
  9. In a small bowl, whisk together powdered sugar, milk, and vanilla until smooth.
  10. While fritters are still warm, drizzle or dip them in the glaze.
  11. Serve immediately for best texture.

  • For extra flavor, toss the apples in a little cinnamon and sugar before folding them into the batter.
