Ingredients

Cookie Dough:

1 cup unsalted butter, softened
1 1/2 cups granulated sugar
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt

1/4 cup granulated sugar

Instructions

  1. Preheat the oven and prepare baking sheets: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream butter and sugar: In a large bowl, cream the softened butter and 1 ½ cups sugar together until light and fluffy.
  3. Add egg and vanilla: Beat in the egg and vanilla extract until well combined.
  4. Combine dry ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  5. Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  6. Roll dough balls: Scoop tablespoon-sized portions of dough, roll into balls, then roll each ball in the remaining ¼ cup sugar.
  7. Bake: Place the dough balls on the prepared baking sheets, slightly flatten the tops, and bake for 9–11 minutes until the edges are set but centers are still soft.
  8. Cool and serve: Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
