Wet Ingredients:
1cup unsalted butter (softened)
1cup brown sugar (packed)
1/2cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
Mix-ins:
3cups old-fashioned rolled oats
1cup raisins
1/2cup chopped walnuts (optional)
Instructions
Preheat and Prepare: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Cream Butter and Sugars: In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
Add Eggs and Vanilla: Beat in the eggs one at a time, then mix in the vanilla extract.
Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add to wet mixture and mix until just combined.
Stir in Mix-ins: Stir in the oats, raisins, and walnuts if using.
Bake: Drop rounded tablespoons of dough onto the prepared baking sheet. Bake for 10–12 minutes until edges are golden and centers are slightly underbaked.
Cool and Serve: Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
