  • 1 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 3 cups old-fashioned rolled oats
  • 1 cup raisins
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat and Prepare: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream Butter and Sugars: In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add Eggs and Vanilla: Beat in the eggs one at a time, then mix in the vanilla extract.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add to wet mixture and mix until just combined.
  5. Stir in Mix-ins: Stir in the oats, raisins, and walnuts if using.
  6. Bake: Drop rounded tablespoons of dough onto the prepared baking sheet. Bake for 10–12 minutes until edges are golden and centers are slightly underbaked.
  7. Cool and Serve: Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
