Almond Paste Cookies:

  • 8 ounces almond paste (not marzipan)
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 2 large egg whites
  • 1/4 teaspoon almond extract
  • pinch of salt
  • sliced almonds for topping (optional)
  • powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 325°F (163°C) and line two baking sheets with parchment paper.
  2. Prepare the dough: Break the almond paste into small pieces and place in a food processor. Add the granulated sugar and powdered sugar, pulse until crumbly. Add the egg whites, almond extract, and salt. Process until a smooth, sticky dough forms.
