Almond Paste Cookies:
8ounces almond paste (not marzipan)
1/2cup granulated sugar
1/4cup powdered sugar
2 large egg whites
1/4 teaspoon almond extract
pinch of salt
sliced almonds for topping (optional)
powdered sugar for dusting (optional)
Instructions
Preheat the oven: Preheat the oven to 325°F (163°C) and line two baking sheets with parchment paper.
Prepare the dough: Break the almond paste into small pieces and place in a food processor. Add the granulated sugar and powdered sugar, pulse until crumbly. Add the egg whites, almond extract, and salt. Process until a smooth, sticky dough forms.
Shape and bake: Scoop the dough onto baking sheets. Add sliced almonds on top if desired. Bake for 15-18 minutes until golden. Cool on a wire rack and dust with powdered sugar.
