Ingredients:

  • 1 cup unsalted butter (softened)
  • 1/2 cup powdered sugar (plus more for coating)
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 3/4 cup finely chopped pecans or walnuts

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugar: In a large bowl, cream together the softened butter and 1/2 cup powdered sugar until light and fluffy. Add the vanilla extract and mix to combine.
  3. Add flour and nuts: Gradually stir in the flour and salt until a soft dough forms. Fold in the finely chopped nuts.
  4. Shape and bake: Roll the dough into 1-inch balls and place them about 1 inch apart on the prepared baking sheet. Bake for 12 to 15 minutes until lightly golden.
  5. Coat with sugar: Let the cookies cool for 5 minutes, then roll them in powdered sugar while still warm. Transfer to a wire rack to cool completely and roll in powdered sugar again for a snowy finish.
