  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup powdered sugar (plus more for coating)
  • 1 teaspoon pure vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 3/4 cup finely chopped pecans or walnuts

Instructions

  1. Preheat the oven and prepare the baking sheet: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugar: In a large bowl, cream together the softened butter and 1/2 cup powdered sugar until light and fluffy. Mix in the vanilla extract.
  3. Add dry ingredients: Add the flour and salt, and stir just until combined. Fold in the chopped nuts.
  4. Form dough and bake: Roll the dough into 1-inch balls and place on the prepared baking sheet. Bake for 12–14 minutes until lightly golden. Let cool slightly, then roll in powdered sugar while warm. Cool completely on a wire rack and dust with more powdered sugar.
