Cheesecake Filling:

  • 8 oz cream cheese (softened)
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract

Topping:

  • 1 tablespoon granulated sugar
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Prepare the dough: In a medium bowl, whisk together flour, baking powder, salt, and 1 teaspoon cinnamon. Beat butter, granulated sugar, and brown sugar until fluffy. Add egg and vanilla, then mix in dry ingredients to form a dough.
  3. Assemble the bars: Press two-thirds of the dough into the pan. In another bowl, beat cream cheese, sugar, egg, and vanilla. Spread over the dough. Crumble remaining dough on top. Mix sugar and cinnamon for topping and sprinkle over bars.
  4. Bake: Bake for 30–35 minutes until set. Cool and chill before slicing.
