A hearty and comforting slow cooker split pea soup made with green split peas, vegetables, and smoky ham. Perfect for chilly days and easy to prepare.

- 2 cups dried green split peas, rinsed
- 1 ham bone or 2 cups diced ham
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 bay leaf
- 1/2 teaspoon dried thyme
- 6 cups low-sodium chicken broth
- Salt and pepper to taste
Instructions
- Rinse and sort the split peas to remove any debris.
- Place the peas, ham bone or diced ham, onion, carrots, celery, and garlic into the slow cooker.
- Add the bay leaf, thyme, and chicken broth.
- Cover and cook on low for 8 hours or until peas are soft and soup is thickened.
- Remove the bay leaf and ham bone, if used. Shred any remaining ham and return to the soup.
- Season with salt and pepper to taste.
- Serve hot with crusty bread if desired.
Notes
- For a vegetarian version, omit the ham and use vegetable broth.
- The soup thickens as it cools; add water or broth to adjust consistency when reheating.
- Great for meal prep and freezes well.
