Yellow Onion:

1 large, sliced

Garlic:

4 cloves, minced

Carrots:

4, peeled and cut into chunks

Potatoes:

4 medium, peeled and quartered

Beef Broth:

2 cups

Tomato Paste:

2 tablespoons

Worcestershire Sauce:

2 tablespoons

Cornstarch Slurry:

2 tablespoons cornstarch mixed with 2 tablespoons cold water (optional)

Parsley:

fresh, for garnish (optional)

Instructions

  1. Season the Chuck Roast: Season the chuck roast with salt, pepper, garlic powder, onion powder, thyme, and rosemary.
  2. Sear the Roast: Brown the roast in a skillet with olive oil on all sides.
  3. Prepare the Slow Cooker: Transfer the roast to the slow cooker and add onions, garlic, carrots, and potatoes around the meat.
