Chicken:

  • 4 boneless, skinless chicken thighs or breasts

Sauce:

  • 1/2 cup honey
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons ketchup
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon fresh grated ginger or 1/2 teaspoon ground ginger
  • 1/2 teaspoon black pepper

Thickening Agent & Garnish:

  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Sesame seeds and chopped green onions (for garnish)

Instructions

  1. Place the chicken in the slow cooker: Arrange the chicken in the bottom of the slow cooker.
  2. Prepare the sauce: In a small bowl, combine honey, soy sauce, ketchup, vinegar, garlic, ginger, and pepper. Pour the sauce over the chicken.
  3. Cook the chicken: Cover and cook on low for 4–5 hours or on high for 2–3 hours until tender.
  4. Thicken the sauce: Remove chicken, shred or slice. Mix cornstarch and water in a bowl, add to the sauce in the slow cooker, and cook on high for 10–15 minutes until thickened.
  5. Finish and serve: Return chicken to the sauce, toss to coat. Serve over rice, noodles, or vegetables. Garnish with sesame seeds and green onions.

Notes

  • Add vegetables like broccoli, bell peppers, or snap peas during the last hour of cooking for a complete one-pot meal.
