Chicken:
4 boneless, skinless chicken thighs or breasts
Sauce:
1/2cup honey
1/4cup low-sodium soy sauce
2 tablespoons ketchup
1 tablespoon rice vinegar or apple cider vinegar
4 cloves garlic, minced
1 teaspoon fresh grated ginger or 1/2 teaspoon ground ginger
1/2 teaspoon black pepper
Thickening Agent & Garnish:
2 tablespoons cornstarch
2 tablespoons water
Sesame seeds and chopped green onions (for garnish)
Instructions
Place the chicken in the slow cooker: Arrange the chicken in the bottom of the slow cooker.
Prepare the sauce: In a small bowl, combine honey, soy sauce, ketchup, vinegar, garlic, ginger, and pepper. Pour the sauce over the chicken.
Cook the chicken: Cover and cook on low for 4–5 hours or on high for 2–3 hours until tender.
Thicken the sauce: Remove chicken, shred or slice. Mix cornstarch and water in a bowl, add to the sauce in the slow cooker, and cook on high for 10–15 minutes until thickened.
Finish and serve: Return chicken to the sauce, toss to coat. Serve over rice, noodles, or vegetables. Garnish with sesame seeds and green onions.

Add vegetables like broccoli, bell peppers, or snap peas during the last hour of cooking for a complete one-pot meal.
