4 boneless skinless chicken breasts
1 box (6 oz) stuffing mix (such as Stove Top)
1 can (10.5 oz) cream of chicken soup
3/4cup sour cream
1/3cup low-sodium chicken broth
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried thyme
Salt and pepper to taste
2cups frozen mixed vegetables (optional)
Chopped parsley for garnish (optional)
Instructions
Prepare the slow cooker: Spray the inside of your slow cooker with nonstick cooking spray.
Season the chicken: Place chicken breasts in the slow cooker and season with salt, pepper, garlic powder, onion powder, and thyme.
Make the sauce: In a medium bowl, combine cream of chicken soup, sour cream, and chicken broth until smooth. Spread over the chicken.
Add stuffing: Sprinkle the dry stuffing mix evenly on top of the chicken.
Add optional vegetables: If using, scatter frozen vegetables over the stuffing.
Cook: Cover and cook on low for 4–5 hours or on high for 2.5–3 hours until chicken is cooked through and stuffing is moist.
Fluff and serve: Fluff the stuffing with a fork before serving. Garnish with parsley if desired.
Notes
For extra flavor, use cream of mushroom or celery soup instead of cream of chicken.
Add shredded cheese on top during the last 30 minutes for a cheesy twist.
