  • 4 boneless skinless chicken breasts
  • 1 box (6 oz) stuffing mix (such as Stove Top)
  • 1 can (10.5 oz) cream of chicken soup
  • 3/4 cup sour cream
  • 1/3 cup low-sodium chicken broth
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups frozen mixed vegetables (optional)
  • Chopped parsley for garnish (optional)

Instructions

  1. Prepare the slow cooker: Spray the inside of your slow cooker with nonstick cooking spray.
  2. Season the chicken: Place chicken breasts in the slow cooker and season with salt, pepper, garlic powder, onion powder, and thyme.
  3. Make the sauce: In a medium bowl, combine cream of chicken soup, sour cream, and chicken broth until smooth. Spread over the chicken.
  4. Add stuffing: Sprinkle the dry stuffing mix evenly on top of the chicken.
  5. Add optional vegetables: If using, scatter frozen vegetables over the stuffing.
  6. Cook: Cover and cook on low for 4–5 hours or on high for 2.5–3 hours until chicken is cooked through and stuffing is moist.
  7. Fluff and serve: Fluff the stuffing with a fork before serving. Garnish with parsley if desired.
