  • 1 1/2 cups uncooked orzo pasta
  • 3 cups low-sodium chicken broth
  • 1 cup sun-dried tomatoes (packed in oil, drained and chopped)
  • 3 cloves garlic, minced
  • 1/2 tsp crushed red pepper flakes (optional)

Finishing Touches:

  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt, black pepper, and Italian seasoning.
  2. Sear the Chicken: Heat olive oil in a skillet and sear the chicken for 2-3 minutes per side.
  3. Transfer to Slow Cooker: Move chicken to the slow cooker.
  4. Add Ingredients: Add sun-dried tomatoes, garlic, broth, and red pepper flakes to the slow cooker.
  5. Cook: Cover and cook on low for 4-5 hours.
  6. Orzo and Cream: Stir in orzo and heavy cream 30 minutes before serving.
  7. Finish: Add spinach and Parmesan cheese just before serving. Serve warm.

Notes

  • To thicken the sauce, add a cornstarch slurry during the last 30 minutes of cooking.
  • For a heartier dish, swap spinach with kale.
