Chicken:

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon dried Italian seasoning
  • 1 tablespoon olive oil

Sauce:

  • 1 can (14.5 ounces) diced tomatoes (undrained)
  • 1/2 cup tomato sauce
  • 4 ounces cream cheese (cubed)
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil (or 1 teaspoon dried)
  • Optional: fresh basil for garnish

Instructions

  1. Season the Chicken: Season chicken breasts with salt, pepper, garlic powder, onion powder, and Italian seasoning.
  2. Cook in Slow Cooker: Place seasoned chicken in the slow cooker. Drizzle with olive oil, pour diced tomatoes and tomato sauce over the chicken. Cook on low for 4–5 hours or high for 2–3 hours.
  3. Add Creamy Ingredients: 30 minutes before serving, add cream cheese, heavy cream, and Parmesan cheese. Stir gently, cover, and continue cooking until the sauce is creamy.
  4. Finish and Serve: Stir in fresh basil just before serving. Serve over pasta, rice, or mashed potatoes.
