  • 4 cups low-sodium chicken broth

  • 2 tablespoons cornstarch mixed with 2 tablespoons water (optional, for thickening)

Instructions

  1. Prepare the Ingredients: Place the chicken, carrots, celery, potatoes, onion, and garlic into the slow cooker.
  2. Mix the Broth: In a small bowl, whisk together the chicken broth and tomato paste, then pour over the ingredients in the slow cooker.
  3. Add Seasonings: Add thyme, rosemary, bay leaf, salt, and pepper.
  4. Cook Slowly: Cover and cook on low for 7–8 hours or on high for 4–5 hours until the chicken is tender and vegetables are cooked through.
