Chicken Stew:
1.5pounds boneless, skinless chicken thighs, cut into chunks
3 medium carrots, sliced
2 celery stalks, sliced
3 medium potatoes, peeled and diced
1 small onion, chopped
3 cloves garlic, minced
1cup frozen peas
4cups low-sodium chicken broth
2 tablespoons tomato paste
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 bay leaf
Salt and pepper to taste
2 tablespoons cornstarch mixed with 2 tablespoons water (optional, for thickening)
Instructions
Prepare the Ingredients: Place the chicken, carrots, celery, potatoes, onion, and garlic into the slow cooker.
Mix the Broth: In a small bowl, whisk together the chicken broth and tomato paste, then pour over the ingredients in the slow cooker.
Add Seasonings: Add thyme, rosemary, bay leaf, salt, and pepper.
Cook Slowly: Cover and cook on low for 7–8 hours or on high for 4–5 hours until the chicken is tender and vegetables are cooked through.
Final Touches: About 30 minutes before serving, stir in the frozen peas. For a thicker stew, add the cornstarch slurry and continue cooking until thickened.
Serve: Remove the bay leaf, adjust seasoning, and serve hot.
