Beef:

  • 2 pounds beef chuck roast, cut into 1 1/2-inch cubes

Seasonings:

  • 1 tablespoon vegetable oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 tablespoon tomato paste

Liquid and Base:

  • 1 (14 oz) can diced tomatoes
  • 1 (13.5 oz) can coconut milk
  • 1 cup beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Garnish:

  • Chopped cilantro for garnish

Instructions

  1. Prepare the Beef: In a skillet, brown the beef cubes in oil. Transfer to the slow cooker.
  2. Sauté Aromatics: Sauté onion, garlic, and ginger in the skillet. Stir in spices and tomato paste.
  3. Combine Ingredients: Add onion mixture, tomatoes, coconut milk, broth, salt, and pepper to the slow cooker.
  4. Cook: Cover and cook on LOW for 8 hours or HIGH for 4–5 hours.
  5. Serve: Serve over rice or with naan, garnished with cilantro.

Notes

  • For a thicker curry, remove the lid for the last 30 minutes of cooking or use a cornstarch slurry.
  • Leftovers freeze well and taste better the next day.
