  • 1 can (14 ounces) coconut milk
  • 1 cup beef broth
  • 2 large carrots, sliced
  • 2 medium potatoes, diced
  • 1 red bell pepper, sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped (for garnish)

Instructions
