Description

This slow cooker BBQ chicken recipe offers a hands-off, flavorful way to prepare tender, juicy chicken thighs smothered in a tangy and slightly sweet barbecue sauce. Perfect for a comforting meal, this dish combines smoky, sweet, and savory flavors enhanced by slow cooking to bring out the best in every bite.

Ingredients

Scale

Chicken

  • 4 bone-in, skinless chicken thighs

BBQ Sauce Mixture

  • 1 cup of your favorite barbecue sauce
  • 1/4 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper

Vegetables & Aromatics

  • 1 medium onion, chopped
  • 3 cloves garlic, minced

Seasoning

  • Salt, to taste (optional)

Instructions

  1. Prepare the Chicken: Rinse the chicken thighs under cold water and pat them dry thoroughly with paper towels. Trim off any visible fat to reduce excess grease and ensure better cooking results.
  2. Make the BBQ Sauce Mixture: In a medium bowl, combine the barbecue sauce, brown sugar, apple cider vinegar, smoked paprika, and black pepper. Stir until all ingredients are well blended to create a flavorful sauce base for the chicken.
  3. Layer Onion and Garlic: Spray the inside of the slow cooker with a non-stick cooking spray to prevent sticking. Spread the chopped onion and minced garlic evenly on the bottom of the slow cooker to infuse flavor during cooking.
  4. Arrange Chicken and Pour Sauce: Place the prepared chicken thighs evenly over the bed of onions and garlic. Pour the prepared barbecue sauce mixture over the chicken, making sure each piece is well coated.
  5. Cook Chicken: Cover the slow cooker and cook on the low setting for 6 to 8 hours, or on high for 3 to 4 hours, until the chicken is tender and cooked through, falling apart easily when pierced with a fork.
  6. Shred and Finish: Using two forks, shred the cooked chicken directly in the slow cooker. Stir the shredded chicken into the sauce to fully absorb the flavors. Let it sit on warm for an additional 10 to 15 minutes before serving to meld the flavors together.

Notes

  • For extra smoky flavor, use smoked paprika or add a dash of liquid smoke to the sauce mixture.
  • If bone-in chicken is not preferred, boneless, skinless thighs can also be used but may cook faster—adjust cooking time accordingly.
  • Serve the shredded BBQ chicken on buns for sandwiches, over rice, or with a side of coleslaw for a complete meal.
  • Leftovers keep well in the refrigerator for up to 4 days and freeze beautifully for up to 3 months.
  • Adjust seasonings like salt and pepper to taste depending on your barbecue sauce’s saltiness.
