Chicken:

  • 1 1/2 lbs boneless skinless chicken breasts or thighs, cut into bite-sized pieces

Seasonings:

  • 3 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper to taste

Additional:

  • 1 pint cherry tomatoes, halved
  • 1/2 cup fresh basil leaves, chopped or torn
  • 1/4 cup grated Parmesan cheese (optional)
  • Juice of 1/2 lemon

Instructions

  1. Heat olive oil: In a large skillet over medium-high heat, heat olive oil.
  2. Cook chicken: Add chicken pieces, season with salt and pepper, and sauté until golden and cooked through, about 6–8 minutes.
  3. Add aromatics: Push chicken to one side of the skillet, add garlic, cook for 30 seconds, then add cherry tomatoes, oregano, and red pepper flakes. Cook for 3–4 minutes.
  4. Finish dish: Stir in fresh basil and lemon juice, cook for another 1–2 minutes until basil is wilted. Remove from heat and sprinkle with Parmesan cheese if desired.
  5. Serve: Serve warm over pasta, rice, or greens.
